Sandy's Salsa

1- 28 oz. can peeled plum tomatoes (or diced)
2 cans Rotel
2 bunches cilantro
2 jalapenos, seeded
5 cloves garlic
2 tsp. salt
2 tsp. pepper
1 fresh squeezed lime juice
2 tsp. cumin
2 tsp. sugar
1 red onion

Put all in blender or food processor. Pulse 30 seconds.

Spaghetti Sauce

1  1/2 lb. ground chuck
1 medium onion, chopped
1/2 cup bread crumbs (I use Italian bread crumbs instead of plain)
1 egg
1 tsp. salt
1/2 tsp. pepper
2 tsp. parsley
1 can whole tomatoes (big can)
1  8 oz. can tomato sauce
2 cans tomato paste
1/4 tsp.garlic powder 
1 tsp. basil
sugar

Mix together and make 8 meatballs.  Fry meatballs on medium high heat in 1  1/2 tsp. Crisco, brown on all sides and drain on paper towel.

Break up the rest of the ground beef in the frying pan, sprinkle with salt, pepper, parsley, and 1 tsp. oregano. When browned, drain the grease.  
Add 1 large can of tomatoes, 1 can tomato sauce, 2 cans tomato paste, 1/4 tsp. garlic powder, 1 tsp. basil, and a little sugar to sweeten the sauce.

Add meatballs back in pan and simmer on low for 30 minutes to 1 hour.

Serve over spaghetti noodles.

Sun Dried Tomato Chicken

1 Tbsp butter
1 clove garlic
1 Tbsp flour
3/4 c Chicken broth, divided
1/2 c Heavy Cream
3 Tbsp Sun dried tomatoes
1/4 tsp Thyme
1/2 tsp Salt
1/4 tsp Crushed red pepper

  • Melt butter in large skillet over med-high heat. Add garlic and cook 30 seconds.Stir in flour and cook 1 minute.
  • Gradually stir in 1/2 c chicken broth, whisking well to avoid clumps. Add remaining ingredients except sun dried tomatoes. Bring to a boil & cook 1 minute. Pour into small bowl and set aside. Wipe skillet clean.
  • Place sun dried tomato oil in skillet on med-high heat. Saute chicken 4 minutes per side (should be browned & cooked through). Transfer to plate.
  • Add remaining 1/4 c chicken broth to skillet and bring to a boil. Scrape any brown pieces up with a wooden spoon. Mix in reserved sauce, add chicken and remove from heat once mixture is warm.

Mushroom Sauce

2 tablespoons mayonnaise
3 tablespoons butter
1 teaspoon basil
1 garlic clove, crushed or chopped
  •  Combine basil, garlic, and butter in a small bowl place in microwave for about 20 seconds. 
  • Brush the bottom side of mushrooms with the melted butter. 
  • Cook for about 5-6 minutes, flip mushrooms over and brush with butter, cook for about 5 minutes.

Guiltless Alfredo Sauce

2 C low-fat milk
1/3 C (3 oz) low fat cream cheese
2 T flour
1 t salt
1 T butter
3 garlic cloves
1 C grated Parmesan cheese
  • Place milk, cream cheese, flour, and salt in a blender and blend until smooth.  
  • In a non-stick sauce pan, melt butter on med-high heat and add garlic. Let the garlic saute for about 30 seconds, you don’t want to burn it.
  • Then add milk mixture to the pan. Stir constantly for about 3 or 4 minutes or until it just comes to a simmer. Keep stirring and let it cook for a few minutes more. It should be much thicker now.
  • When it’s nice and thickened remove the pan from the heat. Add the cheese, stir it up and then cover immediately. Let stand for at least 10 minutes before using. It will continue to thicken upon standing.

Alfredo Sauce

1/4 c butter
1 c whipping cream
2 Tbsp cream cheese
salt & WHITE pepper to taste
1/4 c freshly grated Parmesan cheese
1 tsp garlic powder
  • Melt butter in large skillet.
  • When butter foams, add cream & cream cheese.
  • Simmer over medium heat until it slightly thickens.
  • Season with garlic powder, salt & WHITE pepper.
  • Add Parmesan once you mix the noodles & sauce.

Honey Dijon Sauce

1.5 tbsp dijon
yellow mustard
6 tbsp mayo
3-6 shakes Tabasco sauce
1/2 tsp lemon pepper
4 finely chopped green onion
3 tbsp brown sugar
1 tbsp honey
  • Mix all ingredients.
  • Serve warm.
  • Goes great on Blackened Chicken Sandwiches.

Pizza Sauce

*Warning--This is THE BEST pizza sauce recipe ever!

8 oz tomato sauce
6 oz tomato paste
1 tbsp olive oil
1 tbsp basil
1/2 tsp oregano
1/4 tsp garlic powder
pinch of salt & pepper
sugar to taste (I usually use 2 heaping large spoonfuls...at least)
  • Mix all ingredients in a pot on the stove.
  • Makes enough for 2 pizzas. Depending on how many pizzas I sometimes add more tomato paste. If sauce is too thick, add water.
  • I use the Bridgeford bread for dough. You can find it in the frozen foods aisle.

1/4 tsp. basil
