Tortilla Soup

1 lb boneless skinless chicken breasts
1 medium onion, finely chopped
10 oz diced tomatoes with green chiles
10 oz mild enchilada sauce
1 3/4 c chicken broth
1 can sweet corn
3 tsp dried minced garlic
2 tsp chili powder
1 1/2 tsp cumin
1/2 tsp salt
4 corn tortillas, sliced into 1 inch strips

  • Spray crock pot. Place chicken into crock pot and add remaining ingredients.
  • Cook on low for 6 hours.
  • Remove chicken and shred. Return chicken to crock pot.
